Finally my First Attempt at GAPs Mince Pies! Gluten-Free Dairy-Free

This weekend I finally found time to make the mince pies that I had been planning to make over the Christmas holidays!

I used the mincemeat  filling that I  made back in November. It had matured nicely.

For the pastry I modified a recipe from Cooking with Coconut Flour by Bruce Fife.

 

Ingredients:

3/4 cup coconut flour (sifted)

3/4 cup almonds (finely ground)

3 eggs

1 tbsp honey (optional)

5 tbsp coconut oil (melted but not hot)

1/4 tsp salt

 

Method:

Place the ground almonds, eggs, honey, coconut oil and salt into the food processor and mix thoroughly.

Add the sifted coconut flour and process the mixture until it forms a ball.

Kneed the dough with your hands for about 1 minute.

Tape a sheet of waxed paper to the working surface.

Place the ball of pastry onto the paper and flatten with your hands.

Place another sheet of waxed paper on top of the dough.

Use a rolling pin to flatten the pastry between the two sheets of waxed paper until it is no more than 1/8 inch thick.

Cut the pastry into circles and carefully use to line a pie shaped baking pan.

Fill the pastry cases with mincemeat.

Place a piece of shaped pastry on the top.

Place the pies in a pre-heated oven at 205 degrees C (400 degrees F) for about 12 minutes.

THIS RECIPE MADE 12 LARGE MINCE PIES AND 6 FRUIT TARTS

 

Tips:

I made my first batch (as above photo) too thick! Thinner pastry was definitely better.

The pies cook fast so keep an eye on them to prevent burning. It may help to prevent the edges burning if you brush with water prior to baking.

I left out the optional honey in my first attempt but feel it would be tastier with honey included.

I also made a few fruit tarts using cooked and pureed fruit. They were great!

You could use flaked coconut instead of ground almonds for a more economical alternative.

 

I was really pleased with this first attempt to make a GAPS-friendly pastry and I’m looking forward to experimenting more with it in the future.
