Better late than never! I searched high and low for a tried and tested GAPS-friendly Christmas Pudding recipe but in the end I just took the risk and dived right in on Christmas Eve. I was more than a little relieved on Christmas Day when I turned it out and it actually looked and tasted like Christmas Pudding! lol
Ingredients:
2 cups of sultanas
2 cups of raisins
2 cups of currants
1 cup of prunes
1 1/2 cups of beef suet
1/2 cup walnuts (finely chopped)
1/2 cup almonds (finely chopped)
1 cup candied mixed peel
Juice of a lemon
1 1/2 cups of almond flour
2 eggs (beaten)
1/2 cup whisky
A large pinch of ground nutmeg
A large pinch of ground cloves
1/2 tsp ground cinnamon
1/4 ground allspice
1/4 ground ginger
Method:
Soak one cup each of raisins, sultanas and currants in whisky.
Place another cup each of raisins, sultanas and currants in the food processor and mince well until they form a paste.
Put the paste in a large bowl and mix with the soaked raisins, sultanas and currants.
Chop the prunes coarsely and add them to the bowl.
Add all the other ingredients and mix well.
Grease 2 medium pudding basins and pour in the mixture.
Cover with greaseproof paper and steam for 1 hour.
To serve, turn out carefully onto a plate.
We made cashew whip cream (soaked cashew nuts, dates and honey well whipped in a food processor) to accompany the pudding.

We had almost identical muffins for breakfast – only no duck eggs here so I used common-garden-variety chicken ones, organic though.
